New In Magazines: Food Network Chocolate Edition


Chocolate. Dreamy, wonderful chocolate. If there is one thing I love the most when talking about food, that would be it. Especially if there are cupcakes or brownies involved. So, if you haven't gotten to the newsstand to pick up the March issue of Food Network Magazine, you need to hurry before they are GONE. I was lucky enough to get a copy and to sum it up in one word: WOW.

There are 108 recipes in there with brownies that will make your toes curl. Did I mention red velvet brownies? Yup. It's in there. 
Secret restaurant recipes that will have you wishing magazines could  have a lick and taste feature. Sigh. Dreams. They are what keep us alive, right? Well, this magazine will have me sleeping sweet tonight, that's for sure! Make sure you run out and grab yourself a copy before it's too late!

When I first received this wonderful cupcake book from the publisher, I sat down and started thumbing through it, grin growing wider with each page. All of the stories, recipes and great photography grabbed my attention and I wanted to set to work making one of the recipes. I chose one from the winter collection.
The Gingerbread Cupcakes with Cinnamon Cream Cheese Frosting was my choice.

What I liked:

This book had great baking tips, some that I already knew and some I didn’t. The history of baking with their grandmother brought back memories of being in the kitchen with my own grandma, making Yugoslavian buns and Strukla. All of the wonderful life lessons and unforgettable memories warmed my heart and made this book all the more special.

The tips on frosting were great. My book girl on a budget baking tip collection is going to need a new tip after I tried to use one a little too small for the job and it went exploding off the end and into a heaping pile of cinnamon cream cheese goo. Obviously the wrong size, so when I make this recipe again, I will have the right tip ready for the job. I can happily say, with a mouth full of delicious gingerbread cupcake, slathered in cinnamon cream cheese icing as we speak, that this recipe is sure fire amazing and I can’t wait to cook my way through this book.

The combination of the cinnamon cream cheese and the gingerbread is wonderful.

What I didn’t: Not a thing.

The recipes and baking tips are clear and give you lots of practical ways to make your baking experience pleasant. The flavor combinations are wonderful and the photography makes you wish the pictures were 3-D and edible. If you have anyone in your life that loves cupcakes, this book is a must have.

Guest Recipe: The Brown Eyed Baker Pumpkin Cookies with Brown Butter Icing

Pumpkin Cookies with Brown Butter Icing




Although I declared my less-than-enthusiastic nature towards the Halloween holiday, I am still in gung-ho mode for everything and anything pumpkin. The bonus to baking with a ton of pumpkin this time of year? Any leftover that gets moved into the refrigerator can be stirred into oatmeal, applesauce, yogurt, ice cream… you name it, and you just created a pumpkin version of xyz. I have been meaning to make pumpkin cookies for well over a month and they kept getting put on the back burner. I had them on my list of things to make for this week, but didn’t have a specific recipe picked out when I noticed these on foodgawker. I have always been a big fan of Tracey’s blog (she makes amazing things!) and I loved that these were just a tad bit different, foregoing the traditional cream cheese frosting that is usually paired with pumpkin goodies, and using a brown butter icing instead. I’m so glad that I stepped outside of the proverbial box, because this is a fantastic combination!



These cookies actually have more of a cake-list consistency than a cookie – they are light, fluffy, and the definition of moist. The are packed with pumpkin flavor and perfectly spiced.

And then that icing. Oh sweet icing. This was my first time working with browned butter, and I couldn’t believe how much more pop of flavor there was. The resulting icing is faintly reminiscent of caramel, but not that sweet. It’s just amazing. And it’s a perfect complement to the pumpkin cookies; the flavors bounce off of each other in great balance. These will definitely be dessert for many nights to come!




Pumpkin Cookies with Brown-Butter Icing

Yield: 36 cookies

Prep Time: 15 minutes | Bake Time: 12 to 15 minutes

For the Cookies:
2¾ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1¼ teaspoons kosher salt
1½ teaspoons ground cinnamon
1¼ teaspoons ground ginger
¾ teaspoon ground nutmeg
¾ cup (6 ounces) unsalted butter, at room temperature
2¼ cups light brown sugar
2 eggs, at room temperature
1½ cups canned pumpkin
¾ cup half-and-half
1 teaspoon vanilla extract

For the Icing:
4 cups powdered sugar
10 tablespoons unsalted butter
¼ cup plus 1 tablespoon half-and-half
2 teaspoons vanilla extract

1. Preheat oven to 375 degrees F. Line a baking sheet with parchment paper.

2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger and nutmeg; set aside.

3. In the bowl of an electric mixer, cream together the butter and brown sugar on medium speed until light and fluffy, about 3 minutes. Beat in the eggs until combined. Reduce the mixer speed to low and add the pumpkin, half-and-half and vanilla. Beat until very well blended, about 2 minutes (the batter may look grainy at this point, but don’t worry, it will come together). Keep the mixer on low and gradually add the dry ingredients, mixing until just combined. Use a rubber spatula to give it a final mix, incorporating any flour on the sides and scraping the bottom of the bowl.

4. Use a large cookie scoop to scoop balls of the batter onto the prepared baking sheets, leaving about 1½ inches between them. Bake for 12 to 15 minutes, or until the tops of the cookies spring back when lightly pressed. Transfer the baking sheet to a wire rack and let the cookies cool for 5 minutes then remove them to the rack to cool completely. Repeat with the remaining batter.

5. To make the icing: Add the powdered sugar to a heatproof bowl. Put the butter in a small saucepan over medium heet and let it start melting. Continue cooking, swirling occasionally, until the butter becomes golden brown and smells nutty (be paitent and watch carefully, it can go from brown to burnt quickly). Remove it from the heat and pour it over the powdered sugar, scraping the browned bits from the bottom of the pan. Add the half-and-half and vanilla and stir until the icing is smooth. Using a small offset spatula, spread icing on each cookie. (If the icing stiffens before you get them all frosted, stir vigorously to lighten it up.)

Note #1: You can substitute evaporated milk for the half-and-half in both the cookies and the icing.

My favorite genre is YA. There just will never be a time when that isn't available. I love that over the past few years, more and more books are flooding into the teen realm. I also love zombie, witch, vampire, mysteries, women's fiction and cookbooks. Oh, and crochet/knitting books. With my diverse habits, I don't think I will ever lack for anything to keep me occupied.

Follow Friday



Happy Follow Friday from Bookgirl in the Kitchen! I hope this finds your summer going well and wonderful things happening in the kitchen. It has been a hectic summer around here. From a heat wave to end all heat waves and a lack of rain that has dried up my yard to little more than a desert with hair. So sad. I have been excited to get some more cookbooks to review, so I will be sharing those with you over the course of the next few weeks.





Q. If you could change the ending of any book (or series), which book would you choose? Why and to what?

A. There was a magazine I bought over the holidays last year that had this gorgeous cover shot of cupcakes with this amazing frosting. I brought it home and to my utter shock and horror, the recipe was not in the magazine. That just should not happen. Now I can't even remember the name of the magazine, or even find it. In my disgust, I probably threw it somewhere and maybe I will come across it in a couple of years and get mad all over again. I mean, what editor lets that happen? Sheesh.

I know that is not exactly a book, but I think that still counts, right?

I recently attended an event at my local library, where the librarian had made some cookies in the form of books. They were the cutest things ever and she told me she got the recipe from this book. I downloaded it to my nook and have been thrilled. Not only are the directions clear, the recipes come out good. The cookies both taste and look good. Can't say that about every sugar cookie recipe I have ever tried.

What I liked:

I loved the beginning of the book when it tells you the supplies you will need to complete the projects held within. Very helpful. I also liked the division of the chapters. (Gift-Giving Pantry, Decorative Packaging, Savory Preserved Gifts...) The chapter on preserving your gifts is imperative.

My favorite chapter has to be the confections and chocolate gifts. The recipe for Blackberry-Merlot Jellies on page 119 is to die for. The bark recipes and coconut marshmallows are superb.

Each recipe is tended to with loving care and packaged with attention to detail. This is a lovely book to have on hand during the holidays and even to whip up a gift during the year. Lemon curd! Oh yes!


What I didn't:

A few of the ingredients were specialized and may be difficult to find.

Overall:

This is a lovely book that should be on any serious cook's shelf. Perfect for giving gifts year round, the illustrations are gorgeous, the recipes clear in instruction and the lists of ingredients complete. If you are a beginner, the steps are easy to follow. Directions for preserving are also easy to understand, as that is the most important step of all.

This book is a keeper.

Question of the week:
What do I do when I am not reading?
Hmmm. I read so much, but filling in the blanks...I write alot. Blogging takes up some of my time. So do my puppies and my husband. I review music, so when I am not listening to it, I am usually writing a review about it. When time permits, I try to make my Thursday knitting class, but lately that has been quite the challenge with my full time job demanding more of my time than normal. So, I crochet a bit here and there, watch a sitcom with my husband over dinner and then I am usually back on the computer writing, blogging or reviewing something. Typically, this means I am surrounded by my furry kids, trying to either write a bit on the book, toss some laundry in the machine and run the vacuum all while running plot lines in my head and trying to squeeze as much into my time off as I can. Life is never boring at my house.

Where do you get your books?
Answer: Most of the time I buy my books, both on my Nook and in physical form. I get some from publishers and authors who are interested in having me review them, and I find some at the e-branch of my public library. I love that you can use the e-branch Overdrive system with the iPad and the Nookcolor. It is super cool. I also use Netgalley. For any of you bloggers out there who have not investigated Netgalley, you really need to check it out. It is like an extended library check out system that you can use on your e-reader or iPad.

Q. Let's step away from besties...What is the worst book that you've ever read and actually finished?
A. Oh wow. That is a hard question. The worst book that I actually finished. That is so hard. There have been a lot of books I have read over the years that don't get finished. I think I would have to say the one I hated the most was:




Metamorphosis


I mean, really. A story about a guy that turns into a giant roach? Oh the horror. It was the worst. Wait. No that might actually go to:

Heart of Darkness


I hated every second of this book. It was awful. It's funny, I don't remember why I hated it, but the very thought of reading it again makes me shudder.
